Breakfast Recipes for Easy Christmas Recipes

That special time of the year deserves an equally special spread. Christmas time is as much associated with grand, delicious feasts as it is with Santa Clause and presents. Unfortunately however, this is also one of the busiest times of the year making food preparation quite a challenge. It is during this time, more than any other, that easy Christmas recipes come in handy. Here are some easy breakfast recipes to ensure that your Christmas morning starts right.

Breakfast bruschetta

This famous Italian appetizer, which goes as far back as early as the 15th century, never loses its touch. It’s a breakfast recipe that is sure to make the season even more special.

Ingredients: (serves 12 persons)

  • Trussed cherry tomatoes………………………………..500 grams
  • Portobello mushrooms with the stalks removed…….400 grams
  • Extra Virgin Olive Oil…………………………………………1/4ml (60ml)
  • Mild pancetta……………………………………………………24 slices
  • English spinach………………………………………………….2 bunches
  • Sourdough bread……………………………………………..12 slices
  • Fresh ricotta…………………………………………………….250 grams

Preparation:

The mushrooms and the tomatoes must be placed on a pan and seasoned with 1 tablespoonful of oil, salt and pepper while the oven preheated to 160 degrees Celsius. When done and the oven is at the desired temperature, it is then baked until the tomatoes collapse.

Separately, another pan must be heated where the pancetta must be cooked to a crisp and then transferred to a plate. Then, heat the remaining oil and place the spinach on it to cook until it wilts. Season it with salt and pepper then set it aside.

The third part is to spread the remaining oil on the sliced bread. Barbecue the bread for approximately one minute or until it is toasted on both sides.

Finally, you may now spread the ricotta over the toasted bread and proceed to add the spinach, tomatoes, mushrooms and pancetta making it ready to be enjoyed.

Mango with yoghurt and almond praline

This is an easy breakfast recipe that will surely bring out the spirit of Christmas. A scrumptious treat that is as satisfying to the taste buds as it is pleasing to the eyes. Serve this in the morning and watch everybody instantly light up.

  • Ingredients: (serves 8 persons)
  • Ripe mangoes cut into 3cm thick…………………………………………4 pieces
  • Passion fruit pulp………………………………………………………………..1/2 cup
  • Greek-style yoghurt…………………………………………………………..2 cups
  • Caster sugar……………………………………………………………………….3/4 cup
  • Toasted flaked almonds…………………………………………………….1/2 cup

Preparation:</p>

The first part consists of placing both the mango and the passion fruit into serving glasses and keeping it refrigerated for approximately one hour.

The second portion of the easy breakfast recipes is to make the almond praline. To do this, we must first (1) make sure we line a tray with baking paper and (2) place sugar with 2 ½ tablespoons of cold water in a separate sauce pan. When this is accomplished, we place the sauce pan over low heat and stir its contents until the sugar is dissolved. Afterwards, we mix in the almonds. Then, we pour the toffee mixture on the tray with baking paper and let it set under room temperature.

The third and final step is to break the praline and placing it on top of the previously prepared yoghurt.
